Resetting:
You can reset everything from the Main menu screen --> Options --> Defaults (far right)
(You can't see the Defaults choice during a game until you go all the way back to the Main menu, which is : Esc --> Exit --> Main Menu).
Just changing keybindings:
If you double-click any selection while it's red and flashing, the new keybinding there will be MOUSE1 (which is what you just double-clicked it with).
So instead, click in the selection box just once and hover over the flashing selection, then press the key you want to change it to. (Once you change it, you need to click somewhere outside any of the selection boxes, or you may inadvertently reassign the key to something unintended, which you already experienced )
Now it should be showing two different keys bound to the same action.
The only way I know of to remove one of them is to assign it somewhere else.
Clear as mud?
