YOU CANNOT CHANGE THE DIFFICULTY ONCE YOU'VE STARTED A PLAYTHROUGH. There is a workaround, though. Start a brand new game by going to the main menu, selecting Play, choosing your new difficulty, and skip through the cutscenes to get to level 1. Once you're in level 1 with the dead guard in front of you, open up your in-game console with the tilde (`) key. From there, you're going to use the /spdevmap command to skip to the level you want. Go to the website below to get a list of all of the map names. Scroll to the "Map" section to find the level you want to skip to..

For example, if you want to skip to the tram ride level, your command will be /spdevmap tram. If it's the first boss, it will be /spdevmap boss1.
You'll notice when you load into the level after entering this command, you probably won't have any weapons or ammo. Go back to the strategywiki website and scroll down to the "Weapons" section. There you will find a list of weapons to give yourself with the /give command. Go ahead and give yourself some of the weapons you would've had up to that point. If you just want some mp40 ammo to work with, type "/give mp40" a couple of times. If you feel like you're being dishonest or cheating doing this and you want the same amount of weapons you would have usually had, you can choose the very first level of a particular Mission. They all start out the same even when loading into them with the /spdevmap command, except for Missions 2 and 7 which are carrying over from how you did in Missions 1 and 6 respectively. Missions 3, 4, 5, and 6 all start out fresh with the same guns and health every time. This way, you don't have to enter in the amount of guns you'll have manually. So, to make it easy, loading into "Forest Compound", "Kugelstadt", "Ice Station Norway", or "Bramburg Dam" will give you the same stuff you would've had anyway. Any other level but these, you'll load into it with nothing.
