Then mouse over your skills and check what their scaling tags are (Strength and Attunement most likely for Void Knight) look for those attributes and Vitality, as well as the other options like melee, spell, ranged, Minion, etc.
Using default Warpath as the example it scales with: Physical, Melee, Area, Channeled, Movement, and Strength.
So you'd look for affixes that modify those stats. More strength, more physical damage, more melee damage, more area, effects while channeling, movement effects.
And you'd also consider things like capping your Crit avoidance and reducing Crit Damage, adding ailment chances like Blind, Stun, Chill, Shock, etc on hit., increasing your resistance to those ailments.
Other survivability options are leech, life on hit/kill, health, health regen, etc.
And as a void knight, echo effects are also worth looking into.
But as a baseline start with resistances + Crit avoidance, then focus on the scaling tags of your primary abilities, close out with beneficial effects like Ailment chances and life on hit/kill.
Determine what your sources of damage and defenses are. What do you want your build to do? direct damage? void damage? dot damage? crit damage?
Pick one or two and google what affixes affect them, then put them on your stuff and in your skill trees, and see how it feels.
Or follow a guide and destroy the game without understanding it, comment on how easy it is on forums and how it lacks endgame.
