Game itself has no issues running on multiple monitor systems, unless something else is broken.
Just wondering if there is any way to change the game to windowed mode without disconnecting the second screen, I think it will happen on some of the users also
You can select monitor and change screen mode, screen resolution there. Thou easier would be to launch it with single monitor, change these options in game and restart with two monitors.
If it ends up working windowed but not with borderless window, try some of the 3rd party programs (like "borderless gaming") that can force borderless, in my experiance they do better job than many games original solutions.
