Maybe that's part of the problem. I've only killed the Destroyer twice so far, in PT1 and PT2 (my 2nd char isn't there...yet?), and I've considered him a pushover in both tries. Even the first one.
"Getting used to it" sounds bad enough already, and with Borderlands not giving you guaranteed great gear from boss fights, spending more time on farming and side quests usually provides better gear...
The thing is, if you stay behind those rocks, the purple whatevers that he shoots at you will usually not hit. The tentacles can be ignored. So all I did was firing at his eye, crouched reasonably safely in cover and just whittling down his HP without ever moving. Or not much anyway; I might have moved completely behind cover occasionally to regenerate ammo, as I didn't have the massive ammo regeneration that I have now.
Of course, playing a Siren I don't need kills for anything -- in particular, if the purple whatevers actually DO cause some damage that doesn't heal off in time I can just phasewalk for a massive heal boost. That might have helped (I don't remember all that much about the Destroyer fights, due to them being so boring and non-repeatable anyway).
My very first playthrough I made a mistake of completing all DLC before the main story. Not only did it spoil the plot for me (all DLC take place after the Destoryer has been killed), but I outleveled everything by like fifteen levels. Suffice it to say that killing gray Destroyer is no fun.
