The mechanics of the houses the overall game goals and other points of interest are explained here.

:-D
I can't work out how to do the last one. The game recommends certain magic types - like potions and druidism for example. But even with those classes available, and dropping students into a house focused on those magic types, I still rarely get any graduates that match.
Generally saying: When the office worker event starts,
1) look which of the three offered curiculums needs the 'most' students. That is generally the easiest one to complete.
2) The quest will indeed give you a hint, which magic the students need to learn but it doesn't say 'how much'. That means, if it sais a profession needs 'Beastmastery' for example it could mean that the student needs only one level knowledge of it but it also could mean the student might need to master it at level 4.
3) Just because you created a house that has the students learn the right magic type, it does not mean that the classroom that teaches the specific class of magic they need is available to every student. It helps building up two or three of the required calssrooms parallel so that more students can visit it.
4) It also helps to visit the Villagers faction often. There is one event which randomly occurs that will grant you a teacher upgrade card. Upgrade the teachers in the curriculum classrooms with that card for random 'critical teaching success'. This helps students to level up a lot faster in that class.
5) Almost every magic class has a support learning item (some are unfortunately only available through special events or after unlocking them in challenge campaigns). Set those items up in rooms that the students have to frequent or in a trophy room that is next to such rooms.
(For example vampire students will sleep all day, putting up a hour glass on the wall in the dorms will allow them to master time magic without ever setting a foot into a clocktower classroom.)
6) Some players prefer to specialize their school by only teaching the magic that is needed for the curriculum quest. For that you don't build any of the other classrooms until the required number of students has graduated with the curriculum future. However this will hinder you to get favourable outcomes from events as they need rooms and ites from every color.
