Until others weigh in we don't know if it's something at your end or universal. If the latter then it's unknown if or when it will get fixed. Have you visited the fourms at Wine?
Just to make sure: Does Brave New World for you?
Just tried Civilization V with Crossover and it did not work any better. There're still the same gui bugs.
Well we all know the risks prepurchasing non-native games. But I'm sure that in time it will work as good as vanilla Civilization and Gods and King does. I've looked at appdb at winehq and there haven't been any updates regarding this. I've also asked around on their IRC channel with no responses.
Most frustrating part right now is that I'm unable to find anyone to confirm that they're having the same issues or having issues at all playing Brave new World on Linux.

Still no progress for me.
Below is information regarding my setup. Civilization V worked, and still works, if I disable the Brave New World DLC/expansion.

I am also interested to see what the difference to kermidge will be.
There is a sound issue with music cutting out after a while whilst playing.
I am running Ubuntu 12.4.2 LTS
using playonlinux Wine installed with tricks. The game is running in windowed mode.
I installed using the CD version of the game.
Installation ran perfectly.
All other DLCs are running too. I had Gods and Kings version before I installed Brave New world.

I've now tried to play Civilization 5: Brave new World with PlayOnLinux (PoL). It did not work any better than using standard wine. I don't have the CD version of Civ5 or Brave New World so I had to install Steam in PoL and later install Civilization.
There might be the issue of missing dependencies since I'm not using the Civilization 5 "profile" directly.
I'll write another reply once I've managed to do an exact copy of the Civilization 5 profile in PoL.
Starting to wonder if it's really the wine setup itself that's the problem. Doesn't feel like it should be related to the graphics card though. But still.
Horusforgives and kermidge: Are you using nvidia or ati?
I actually tried running the game in my native laptop res 1980 x 1080 and it works fullscreen and the sound issues i have have stopped. The game runs smoothly.
I have NVIDIA-SMI 4.304.88 Driver Version: 304.88 GeForce 9600M GT 1gb RAM
Try the latest wine version and use the winetricks. Im new to ubuntu and its worked for me.
Only Installed Ubuntu on Tuesday 16th.
Sorry for delay in reply, too much external crap going on.
The only 'direct' Wine install was done by the Compholio patch so that Netflix will run from my Ubuntu 12.04 64-bit desktop and isn't involved with Civ at all.

I run Civ V using DirectX 9 from the launcher menu.
If I rememberd how to use winetricks I'd be glad to. I'll try to figure out where I should put it to have it look at the internal Wine setup that Crossover uses.
1. Open your wineprefix (if using winetricks, this is in $HOME/.local/share/steam)
2. Navigate to the Civilization V folder (its going to be in drive_c/Program Files (x86)/Steam/SteamApps/common/Sid Myer's Civilization V/ in a default install).
3. Open the Assets/DLC folder
4. Assuming you have GNK, BNW, and a few DLCS, you see folders name (Expansion, Expansion2, DLC_01, DLC_02).
5. Rename Expansion to Expansion3 (this forces Civ5 to load GNK before BNW)
**6. Rename Expansion3/CvGameCore_Expansion1.dll to Expansion3/CvGameCore_Expansion3.dll
**7. Rename Expansion3/Expansion1.Civ5Pkg to Expansion3/Expansion3.Civ5Pkg
8. Launch Civ5
**9. Go to DLC menu and activate GNK
