Why is science good?
Could anyone tell me why science is good in civ 5?
What does it do?

More science => faster technological advance => better armies, economy, and you can build Wonders before anyone else.
It allows you to research new technologies much faster. New techs give much better units, buildings and improvements. It is a must have for a sucsessfull civilisation

also more people = more science
but
more cities ~= more science

You can also win the game by researching the final technology.

not quite, once you finish the final technology, if no win conditions have been met, you simply continue to research that tech and every few turns some points are added to your score, so really nothing happens. The science win is the space race, you've gotta build the spaceship

Well, I was sure you need the final tech to build a spaceship.

nah you can build the spaceship with like 4 or 5 techs unresearched. Future tech is just a science sink omce you run out of tree. It is essentially meaningless beyond the 5 points per time you research it.

Because building a spaceship entirely out of bronze is tricky.

In short, science allows you to snowball in technology, so that if you're going for a Cultural Victory, you can get the Wonders that help generate Tourism sooner, Domination Civs can be so far ahead if they get enough beakers/science that they can be using tanks while fighting the one Civ in a game that was harassed by barbarians to the point they might have a few Composite Bowmen by the time you finally meet them. Science Civs is simple, quicker access to spaceship parts. Diplo Civs can get the technologies that help with delegates and extra spies all the sooner.
