Most Fun Map?
I'm planning on starting a long single player game as the Shoshone. I usually play on continets but I feel like varying it up a little bit. I have most of the DLCs.

Depends on what you find fun. If you were an isolationist, tiny islands would give you a nice buffer from other civs. If you were a warmonger, or just hate how bad the AI is at naval combat, then pangaea saves you from having to cross an ocean to achieve victory.

I've discovered that archipelago maps (on a huge map, in particular) are fun for me. Great of course if you're playing as Polynesia, but I've enjoyed archipelago with the several other CIVs I've tried. I like being able to develop my own CIV for at least 75-100+ turns without having to worry about the AI. Depends on how many CIVs are in the game, of course.

Archipelago is terrible for Player VS. AI games since they struggle to form a formidable navy.

Only if you want to be challenged. There are plenty of players whose idea of fun is not to be challenged, and gimping the AI anyway possible makes the game more enjoyable for them.

Picking Venice as your opponent and having no city-states also will make them pretty powerless. If you also delete alll other players (on larger maps), then you basically have the whole map to yourself without having to hotseat as all players.

In one pangea game with those conditions, I rushed settlers around their borders and used general citadels to steal away their land. The result was a Venice with no tiles other than a few water and the one the city occupied. Leaving them nothing to work and no resources is just funny.
