If the CIV that you religiously follow has a significantly lower game score than you, then you might use their religion as you say; but if you follow the religion of a CIV that has a current score of, say, 1250 to your 665, then you may be setting yourself up to come in second-place ...and there is no second place in CIV V.
As a rule of thumb: never use or contribute to the religion of any CIV that has a significantly higher score than you; you're just helping them win.
Only the player that created the Religion gains the bonus
As long as the Religion did not choose a very good Founder Bonus, Embracing it will not be too negative. If you have your own Religion, with a stronger Founder Bonus, then you will want to spread your Religion to take advantage of the Founder Bonus.
It is more than possible to choose bonuses based on intentionally allowing your Religion to be Erased. Such as Pagoda and Mosques, their bonuses (once bought) remain
-You can chose the beliefs yourself rather than being dependant on someone else choice
-Each city you have will get a religion faster since you'll be able to spread it yourself
-You will be able to benefit from the founder belief (only the founder civ benefit from that) which are very strong bonus like Tithe or Pilgrimage.
-You may make your own religion the world religion, giving your capital a HUGE boost in tourism
