Go to DLC. Uncheck Brave New World Expansion Pack. Click OK. Try that and see if it will disable BNW for good.
I've tried it and it doenst work like that :/ But thanks for a note with this fact that old saves still working.
As for the music, you can also find it on YouTube but also on the Soundtrack included with G&K. Look in OS(C:) - Program Files(x86) - Steam - SteamApps - common - Sid Meier's Civilization V - assets - DLC - Expansion - Soundtrack
Add the Soundtrack to Windows Media Player and you have all leader music, scenario music, intro music and the menu theme for G&K.
ps: to reenable it, rename the folder back to Expansion2

In the steam client, library section, right-click Civ V and go to properties. Then the DLC tab.
Uncheck BNW and it will act like you never bought it. Same thing to turn it back on.
Your G&K save files should already work. When an old save is loaded, it disabled any newer DLC.
Edit: As I said i n another thread, I don't recommend renaming the expansion2 folder. Just disable the DLC.
Are you do this from the Steam client, or from in the game itself?
If you disable the DLC in the game, it will turn back on next time you load the game.
If you turn it off in the Steam client, it will disable it from your account, and it won't load at all.
You can swap the video files around as well. Same with the menu music. You could even add your own menu music (I used to have Baba Yetu when I was playing Vanilla.)
I also am on a Mac but I bought BNW seperate and I also have diabled all DLC in my steam options and yet BNW still loads everytime. So Sjoerdleskriker don't feel alone.
Also, that's the only official way I know of to get DLC disabled.
