Seriously though, Arabia is one of the easiest civs to play well. What level are you trying to play?
Later on it gets more complicated, you need to know civilisations and observe their problems with each other...and their problems with territory, and adapt as fast as possible
I am a america. And i don't understand the other types of "victory methods", like for science...Once i reach a certain amount of science i win?
So far now, i guess you can say my only plan is to destroy my enemy.

I'm going to say what Twelvefield said. Set all opponents to Venice. Set City-States to 0. Choose your Civ (can't be Venice). Win.

No DLC
America can have some early dominance due to their Unique ability, butit is mostly used for scouting. Wait until you get minutemen for a major assault. You can take over civs before then, but it is not required.
Social Policies: Honor is your big one,while liberty/commerce help until you can choose Autocracy. Then Choose Autocracy. IDC if you want to role-play washington and pick freedom, you want Autocracy. Release your inner fascist.
How to assault a City- Early-mid game Siege style(certain civs, such as mongolia and arabia, use other strategies)
Have many units 3 tiles away from the target city, in a position where they could move into range in a single turn.
Once you have enough, send in melee/gunpowder units adjacent to the city, should have 4-6.
ON THE SAME TURN, send in ranged units to a position where they could shoot the city.
Next turn: Fortify all melee units.
Barrage the city with ranged attacks.
Repeat until the city is at less than 40% health, then attack the city with your melee units.
The city should fall.
Late game City seizure: Bomb the ♥♥♥♥ out of the city you wish to take with your B17s and stealth Bombers (which you upgraded from B17s) until it is at very low health(<10%). Then send in a few Tanks/Modern Armors/Giant Death Robots positioned 3 tiles away from the target city to take the city.

I am generally confused about everything. Like when do i want a lot of science? When do i want more food than gold? etc. What techs should i research, should i go directly down a tech patch each time. Or do i hybrid with techs? What tech do i research right away, etc.
