ignore them. I've yet to see a city state's military do anything other than defend. If they declared war on you it's also likely that another civ declared war on you, take your issue up with them.
I once settled near Sidon on a small northern flat tundra area to get some oil. 2 Turns later, their ally declared war on me and they waltzed three infantry over and took my city and razed it.
Not entirely true. If Venice or Austria (I'm actually not sure if both can do it) do their unique take over CS ability, and then you go capture it, there is no option to libernate, and you can then raze it.
Just give it away to someone through trade. And yes, unhappiness does go down after building a courthouse.
