It is fun against one or two civs, but on a stadard size map with 8 civs, not realy. It can get very boring towards end. Not saying that other victory types are super interesant in the last turns when you already know you are going to win, but at least you can go through these turns quickly.
Yeah, more fun because you also have to prevent the other civs from achieving their preferred victory type.
Time, though not as brain dead as diplomatic, it's not exactly hard either, and most of all: unsatisfying, only time I got it is by accident because i took too much time for a culture victory I was about to get.
Diplomatic as said above is just a easy win button as long as you have a solid economy. The fact that City States are so easy to be allied with, makes it ridiculously easy even though you could have messed up your whole game. It'd have been more interresting if you had to make other Civs vote for you. The City States matter too much so freeing defeated Civs to have their support in Congress, paying others to vote for you, it's pointless.
You can just turn off city states and it'll be the way you want.
Domination is fun for a while, but often gets tedious before it's over.
Science remains fun just for the fact that it is the victory which tests your tech rate efficiency more than any other type. It is good as a "benchmark" of how long it takes to get to the end of tech. Other victories can bend the rules and finish the game early (dom, culture with sacred sites)
