Where to place my great scientist?
Just bought the game, this is my first game ever and unsure what to do

Right there where he's standing looks good to me. I would prefer a 2-food or wheat tile without fresh water, or horses if you have more than one horse tile (so you can still build a stable), but you don't have one of those. I'm not sure if there's any disadvantage to putting an academy on a stone tile, that might be good too.

Jungle isn't relevant at this point. You may not have the tech to cut the jungle, but if you do, put it there where it cannot easily be pillaged. Other choices are bad. Don't put it on a luxury! If you don't have the cut jungle tech then put it one one of the two grass squares. The west hill would be good, if you have plenty of gold to buy the tile. Don't wait, because this early scientist is a big Babylon perk which needs to turned into a landmark right away.

Personally I'd wait until I started researching a new tech and then use him to rush the tech.
Early scientists are better used as land marks. You'll gain more science over the long haul that way. If it were me I'd buy the desert hill to the west of that forest by the 2 mountains and put him there. That's a nice sage spot and easy to defend.

This will also help you get the stone quicker to help production.

I prefer to put my great engineers and scientists on comparably poor tiles like desert or tundra (tiles with no or only a low yield). Only when all poor tiles are in use i start putting the engineers or Scientists somewhere else, generally starting with plains with no access to fresh Water. After all plain tiles are in use by great persons i switch to improve tiles of the same type: i replace a saw mill on woods or a mine on a hill with a factory and so on...

I think, that if i put an engineer on for example a grass tile, im loosing the ability to build a farm there and so im loosing at least one food...

The great general citadels are a great way to protect your Iron from the raging barbarians (& Zulu's). I have never tried it on horses.

Welcome to Civilization 5. Rest assured, you are playing the very best game in the Civilization franchise. The others are basically cartoony trash in comparison.

generals are too valuable to be used like that. In a 3 way war vs deity every general counts

I usually play immortal/Legendary with 20 civs. Using the Honor tree that first general often puts me over my unit limit & adds maintenance costs when there I do not have much $, so I claim the iron. Based on the map placing a citadel in a bottleneck can be more valuable a defensive bonus that the attack bonus' would provide. The Citadel can also damage ships. I mostly agree with you in the Mid to Late game.
