I found a new map in my maps list, no idea how it ended up there: Turkey.

There is also a France one I haven't tried yet.
Anyway, Pangaea will give you total war from the get-go, but it neuters the chance for naval warfare. You might not have access to a coast until late game, and even if you do, it won't be of that much use. Fractal's a nice mix, but it's basically thinner and slightly more random Continents, where the continents themselves tend to be of unequal size. Statistically you're likely to end up on the largest. Continents is a good map, but you won't have any idea what's happening with half of the civs in your game until Astronomy. Continents carries a much greater potential for runaway civs because of this; if someone's getting too strong, you won't be able to do anything about it until you meet them, and it'll take time past that before you're in any position to bother them at all.
OTOH, it lets you conquer everyone on your continent and start fresh diplomatically on the other side. (Not that it'll make much of a difference if you're going to immediately attack them anyway, granted.)
Archipelago is the exact opposite of Pangaea and I would not recommend it for the game you want to play. Pretty much no opportunity for land warfare, which is the main type.
I'd grab Pangaea unless a.) you really want prominent naval warfare, or b.) you don't mind being unable to see what's going on for half the civs in the game, either strategically for for the spectacle. In that case, probably Fractal.

But the words you capitalize aren't even ones you'd naturally emphasize. I guess it's not my business, but I raise an eyebrow every time I see it.
