Report a translation problem
1. start in a very late era (not sure when religion is being disabled, but I'm 100% sure it is if you start in the information era)
2. find CIV5Worlds.xml and change the 'max religion' value to 0 (if you have all DLCs you'll have to change it in all three textfiles)
So, yeah, Religion still plays a part of winning. So I don't think it can be removed, at least not without modifying files or using mods or something... Still, you can win while pretty much ignoring it completely, so, whatever!
I think I disabled it several different ways:
In the "ERA" xml files, there was an entry for each era on "DISABLE RELIGION", set False for early Eras, True for after Renaissance, so set all Eras to True
In "Gameplay" xml files, the "Disable Religion" visibility to "1" ( this in multiple files). This causes a "DISABLE RELIGION" button to show up in the Advanced Set-up screen
Never did find "MAX RELIGIONS" though?
go to Sid Meier's Civilization V\Assets\Gameplay\XML\GameInfo\CIV5GameOptions.xml
in notepad, find "NO_SCIENCE"
above that entry, in between '<row>' entries, add
<Row>
<Type>GAMEOPTION_NO_RELIGION</Type>
<Description>TXT_KEY_GAME_OPTION_NO_RELIGION</Description>
<Help>TXT_KEY_GAME_OPTION_NO_RELIGION_HELP</Help>
<Visible>1</Visible>

it doesn't show up there because they removed it from the file... for whatever reason.. maybe the devs are trying to make it as difficult as possible to play without religion. idk.
but start the game up and you should see it in advanced game options. make sure it looks like all the other entries around it.
My favorite style is to play midway between the two extremes: disable BNW, but leave in Gods and Kings. This gives you a game that still has you building the Utopia Project, but you don't have the aggravation (to me) of all that tourist popularity thing. You still have religion, but it doesn't play such a vital part.
And to answer another question as to why a person doesn't want to deal with religion: two possible reasons:
1. The player is a firm atheist, to whom religion is anathema,
or:
2. The player takes his/her own beliefs seriously enough that it seems a little blasphemous to use faith as a plaything.
Dont disable it...embrace it.

It appeared recent to me so I posted. Then you posted about posting, and now IT'S ALIVE, IT'S ALIVE!
do "search in files" in "Steam\SteamApps\common\Sid Meier's Civilization V"
and replace any "<NoReligion>false</NoReligion>" with "<NoReligion>true</NoReligion>"
This do before set up a game, as this is stored in the ..Civ5Save
you can't change it after start.
AI civs which prefer religious development pathes will lack in research as they still run the religion research pathes. (i.e. Spain)
