How to turn the sail ?

I know the maneuvers of moving boats and how to raise or lower the sail but I have no idea how to turn the sail in the desired direction.

You cant, it always faces in the direction of the wind. So if your sailing into the wind you cant use the sail and have to just paddle. Kind of annoying, but makes sense. For me the wind is almost never in my favor when traveling by boat

The sail turns itself. You just steer like normal with w and d.

Paddle is the single arrow forward/backward and it'll show a paddle icon as opposed to the sail.

Boats have 5 "gears" indicated by the arrows.

3: Full sail
2: Half sail
1: Paddle
0: Idle
-1: Reverse paddle

With storm winds tacking with the sail can sometimes be worth it when travelling against wind, but generally paddling directly into the wind is better.

It's worth noting that if, while sailing at full speed, you should encounter a sea monster. He will NOT engage if you do not drop your sail. That is to say, keep going and don't stop if you don't want to engage.

it automatically turns to the wind
