Boars are the most aggressive fackers in the whole game, they will pursue you for miles and even swim after you or your boat.
Sneak is the option for deers, especially if you don't want to use a bow.
stone and flint axe can kill all the early game stuff at 25 hp
expecting to use a woodcutter tool or a sword to hunt is just stupid.
Deers, on the other hand, will require you to either sneak-kill them, or require you to buff the hell out of your stamina size and regeneration, and, preferably, grind some of your running skill.
If you have enough stamina, you can actually catch up to it and possibly smack it. Just use the weapon with the fastest swing speed. It is also possible to corner the deer, or make it stumble on height differences. AI is kinda jerky, when it comes to navigating through elevations
You can stealth kill them with your bare hands or any weapon, a knife is not needed.
You are going to struggle against the first boss. And the second boss and the fourth boss if you refuse to use a bow.
Second - you don't need to kill the boss immediately, you need to make a hammer to construct things and build a workbench.
From there you open up other options - flint tools will be your first target, and you can find the things for them on the meadow shore, from deer and boars, and from trees. As you discover more types of building materials it will unlock more things to make you a better survival and killing machine.
