RimWorld. You make a colony and must survive attacks similar to Valheim. You can raid other colonies and partake in quests. It doesn't play like Valheim but it's scratched my itch of creating something while being pressured to survive in a weird world.
Post script- it's UI is pretty poop and there's some reading required- check out a YouTube video or two and it'll become more intuitive.
Don't Starve is one I keep going back to again-and-again. Graphics are minimal, but play is very straight-forward and intuitive. Lots of luck involved at the beginning, and you have to figure out some sequences to get past a few weeks but even at higher day counts, it can still get you.
I've been happily going along at over 300 days and still have it all destroyed by a ticked-off critter.

Rimworld definitely has my attention. I really hate the graphics but I hear you get used to it. Waiting for a sale, though.
The dev doesn't believe in sales, Rimworld only ever goes for 10% off lol

Empyrion is so janky though. Your character feels like he floats through the air. The motorcycle drives like a huge boat. No physics. Can tell the encumbrance system was tacked on. Whole ship building system is convoluted to the point of absurdity. I tried to like Empyrion but it's just terrible. I can't believe it's considered out of early access. Even the enemy names are whatever they're called in the code. Like what? Give the enemies names before you come out of early access.
I vote 7 days to die. It's zombies, janky but one of the best survival games out there because of all the options you have for play style. Just add some freaking parking breaks.
