Question about Ambience

I am having a hard time understanding how the ambiance numbers relate to the size of the restaurant. How do you know how much each group of customers require in order to get the green check mark? I have a large restaurant with 10 General, 7 Rustic, 6 Modern, and 2 Elegant. The only green check mark I have is for the Cheapskate. No matter what I add, I can't make the Blue Collar happy with a green check mark. What am I missing? Also, what qualifies as General? Tables and paint? Thanks in advance :D

FWIW, once you get enough cash, you'll want to place as many dishwashers as you can, and use the highest level of daily cleaning you can. Both are easy ways to boost up that General ambiance score, which all groups like. From there, it depends on what groups you're trying to attract. Late game, you need to attract as many Gourmets as possible, but by the time you get to that point you should have tons of money to redo your restaurant for that purpose.
