If you find RE2 boring, you won't enjoy all the other RE series.
Along with RE1 of PS1, it can be said to be the masterpiece of the series.
The shock of 1996 was unforgettable.
Of course, RE7 is as interesting as those.

Though RE2 Remake is also a good game to start with but keep in mind that the 2 games play very differently for the most part. So even if you may not like a certain one, you could like another.
To run through those differences...
Resident Evil (1) through Code Veronica (not technically a main numbered title but oft considered part of it), including Resident Evil Zero, have the original style of gameplay, with static camera angles, "tank controls", and 2-D pre-rendered environments for most of them (sans Code Veronica which was 3D but otherwise the same). Gameplay focused on survival horror, although some had more action, some tried unique and new things, etc. but the basis was the same.
With Resident Evil 4, the game went fully 3D with a behind the shoulder perspective, which had huge effects on gameplay and decisions that needed to be made on how to address the differences this would cause. Capcom more or less elected to continue the more action-focused and wacky story direction of the prior two (Resident Evil 3 and Code Veronica respectively) titles, and the series turned mostly into what's called a "third person looter shooter" and less a survival horror as it once was, where enemies dropped ammunition, guns were upgradeable (I think, it's been too long?), and so on. While not an awful game on it's own, per se, and often considered one of the best, Resident Evil 4 was where the drastic departure began, and I personally didn't care much for it. Resident Evil 5 introduced a co-op campaign and continued to craziness. YouTube search on "chris punches boulder" and prepare for the hilarity.
With Resident Evil 7, they again changed things. They changed the perspective to be first person, instead of third person, but otherwise went back to the original series roots/style. Resident Evil 2 (2019) and the upcoming Resident Evil 3 (2020) are like this, but actually I'd argue it's a subtype and that there's four types of main games, since the third person perspective changes a bit.
Then you have alllll the side games... To be honest, Revelations is okay-ish and worth the look too, but most of the rest aren't super important unless you want to dig deeper into the series and/or it's lore.
TL;DR: Yes, this is a fantastic place to start, although it might not be the best. I would say Resident Evil (remake), Resident Evil 7, or this are the three best starting points, but you'd practically have to try all of them plus Resident Evil 4 to get a taste of all of what the series offers. If you don't care for 4, you can skip 4 through 6 and honestly miss the worst (IMO) of the series.
If you want more action packed game and less "Resident Evil" of survival, exploraiton and puzzling, there is always RE 5 and RE 6 that are just bland copies of Left 4 Dead with some lore and story background.
RE 4 . . . I did not enjoy, a lot of combat, little to no puzzling and a lot of QTEs (and I hate QTEs also I see no purpose on RE neither the purpose of the RE 4 QTEs that could be just cutscenes and it all would be fine), I never gone too far into the game to find anything "Resident Evil like" with exploration and puzzling, also not much "survival horror" as it seemed more like hordes of easy to kill zombies.
I checked later (many years later) on youtube and RE 4 seem to be good but the bad taste the beginning of the game left to me was enough for me to never want to touch that game again.

These are the classic RE. The fixed camera angles, tank controls honestly were super effective and innovative in that era. But I feel that they don't really age that well and can be a huge barrier to newcomers.
RE4, RE5, RE6
The action RE. The series changed as a whole starting with RE4. Resource management got thrown out of the window the moment enemies started dropping ammo. The fact that enemies drop gold, skill points etc. incentivise players to kill. No stress of deciding who to kill or who to run from as killing is always the best policy. While not essentially bad games, they throw horror and resource management out of the window and are bad representation of RE.
RE7
The lone entry in the first person RE. Great game overall. Leans very heavy to the horror and jump scare side of things. Early parts of the game feels more P.T., Outlast-esque. A very good horror game but not the best representation of RE as a series as it strays a little from the original feel quite a bit.
RE Revelations, RE Revelations 2
In my opinion, they are probably the best games after the action RE era. Good mix of action, horror and resource management. RE Revelations 2 also tells a good story of family relationship. They are probably closer to the RE2 Remake in terms of balance. However, both were lower budget titles and may feel a little clunky or cheap to newer players to really make a good interpretation of what RE really is.
With RE3 Remake yet to fully release, I advocate RE2 Remake as the best title to start. If you like the game and characters, universe and story as a whole, then check out the rest of the series and see what works and what does not.

Resident Evil Survivor was the first entry so RE 7 is not "alone" neither was the first.
But RE 7 was the one that did it right
Yes, I agree, RE 1 from PS1 (the first version) was epic on its own, RE 2 and 3 with fixed cameras too.
Mostly what really changes having a free camera (3rd person or 1st person) is that you can see ahead and not be surprised by something at the PS1 you would just "hear" and would be able to see just some steps ahead.
That feeling is killed by the 3rd and 1st person view with free camera.
