What is Kendo's fate?
In the original we know it is canon that he died. But in the Remake he kills his daughter but then that is all we know about his fate. Ghost Survivors is just a "what if" scenario so whatever is in there is non-canon.

Did the remake rewrite Kendo's fate?

The remake isn't canon, never was intended to be.
If you watch the ghost survivor intro you can get a good idea of what prolly happened to him, he did a curt cobain.

It's not a 1:1 remake, the events differ from the original, the game didn't try to take the original's place. It's a reimagined version of the events of RE2, stated by the devs on multiple occasions (google it). Reimagined automatically translates to "not canon" in my mind.

Remake mean new canon actually a bit like DMC and devil may cry it a new canon or univers if you want because people did not like it they choose to make the Devil may cry 5 instead of DMC 2

Not necessarily, especially since they stated it's more a reimagining than a remake. Sure RE1 Remake is canon, because it's a 1:1 remake with added stuff, and also directed by the very creator of the series.

But you forgot that overall events and the outcome are still the same. It differs from the original here and there, sure, but overall it still fits perfectly into canon.

a remake in the other hand it reimagining the story that why it's call a remake not a remaster

Look at it this way. Silent Hill shattered memories is a reimagined/remade Silent Hill 1. Doesn't make it canon AT ALL.

Capcom and the team behind the "reimagined" have a huge respect for the original and its team. They're not gonna discard it and piss off the fans/creators. Hence the original is still canon.

RE1 Remake is an entirely different story. It was directed by the creator of the series, and it's still a 1:1 remake, with added plot and areas.

this has confused me too but it looks like he didnt killed his daughter he killed himself and yes ghost survivors arent canon but u can see what happaned with kendo there he wanted to kill himself (this is where we can hear in the real campain the shot ) and now in ghost survivors he didnt died because of a friend if im remembering correctly thats the whats IF scenario.

If i understand it correctly he didnt killed his daughter in the story he killed himself.

Re1 Remaster is actually a remaster of a remake that was out on the gamecube ( they had thing that was not in the original and but still follow what was in the first ) and The remaster is canon
