How do you avoid G-Adults?
I'm playing through Leon's second scenario and in general for some reason I find this campaign harder? I didn't have a problem dodging them before but they have such a wide grab and they're hard to move around.

Bait their grab.

Before you actually walk up to them while they're in the water, there's a small moment where you can start walking backwards and completely bait their grab attack. And then you can just walk past them to the left. It's pretty simple.

Just about always their left. If you try right they tend to just spam the grab move and you cant get clear before the second one hits. You can get past on the right sometimes if they do the collapsing slam attack provided it doesnt stagger you from the near miss but its tight. You can also get past if you bait out their spawn move provided you get into range before the first one can stagger you.

Or flashbangs. Unlike in RE4, flashbangs work in the water.

I find that often when you climb back on a surface after they spawn, they dive back down and USUALLY this gives me enough time to run right back before they re-surface

Yeah this works well for like 3 of them. Sadly you can't use this strat on all of them.

It may or may not work on all of them from my experience, but it seems to be purely luck-based, depending on when and where they want to resurface.

This is the only enemy in the game which makes me rely on defense items to be perfectly sure about avoiding damage from them, but that's fine.

The defence item method is wildly inconsistent though. They put you back in front of them and if it was not a hand grenade, they only wiggle for a short time then immediately go for a grab. Even worse, their animation makes their hitboxes wider, so you may just walk into them.

Another method is just damaging them with something powerful. If you are not aiming for the shoulder eye, they dive back as a defence mechanism and won't resurface for a short period of time, even if you stand right above them.
