Chris' recovers faster after a shot
And Weskers either does more damage or does what both Jill and Chris verisons do....
Idk just my guess.
Jill = Faster Draw and first zero.
Chris = Faster zero on reticle after each shot.
I've tested all 3 Samurai Edges, the Matilda and the SLS 60 for a few hours now. It seems that the amount of bullets a Zombie can take is totally random, making it very difficult to understand as to how much damage a weapon really does. (Sometimes a head exploded just after 1-2 bullets, while other tries needed up to 12 shots in the head to finally kill a Zombie. This happend with the same gun, tested on the same Zombie)
My observation is as follows: (All stats refer to how they perform at the beginning of the game, without any upgrades!)
Matilda - "Low" damage but good stopping power. Good capacity with 12 rounds. Crosshair closes slowly. (around 4 bullets needed to put a Zombie down and another 6-8ish to kill it)
SLS 60 - Highest damage and good stopping power. Highest recoil. Very bad capacity with 5 rounds. Extremely slow reload speed, which gets a lot better once you find the first upgrade very early in game. Crosshair closes slowly. Movement friendly & aim friendly. Crosshair stays focused when you move and instantly closes if you move your mouse.
Note: The SLS 60 usually puts a zombie on the ground with only 4 headshots. Which is great if you just want a secure way to avoid an enemy you otherwise couldn't (Zombie isn't fully dead afterwards and needs another 4ish rounds to be fully killed)
Chris's Model - Crosshair closes the fastest making it a "quick draw" weapon. Very good if you have to reposition yourself often. Damage is rather low but stopping power seems to be good. 15 rounds magazin! (around 4-5 bullets needed to put a Zombie down and another 6-8ish to kill it)
Jill's Model - Honestly, it still boggles my mind. It seems to be very similar to Chris's Model, but I have the impression that it's damage and stopping power is the lowest of all guns, or on par with the Matilda. 15 rounds magazin! (around 6 bullets needed to put a Zombie down and another 6-7ish to kill it)
Haven't found any real reason to use Jill's weapon over the others so far.
Wesker's Model - Good damage and stopping power, better than Matilda but lower than SLS 60 in both categories. 4-5 bullets will put a Zombie down and another 4-5 to totally kills them.
Chrosshair closes even slower than the Matilda & SLS 60. What really makes this weapon shine though: it's crosshair closes even if you readjust your aiming. So as long as you don't move, you can spin your mouse like a madman and it will still focus. None of the other weapons do that, making this gun very good if you don't have to move around. (Funny enough, in this regard it's basically the opposite to Chris's gun.)
Addition: Seems to have the highest crit rate.
Also: I'm playing on Hardcore and I can't say that any of these guns lower the damage taken from enemys. Every Zombie bite will put the character into critical condition.
If you feel I made a mistake or you observed something else, please let me know! I'm still trying to figure these guns out and am glad for any input. :)

I also had the impression after testing that Weskers did more damage, but I did not notice the crosshair stying tight when moving my aim around, that is very usefull indead.
Jill and Chris's where pre-order Bonuses, but don't know where you had to buy it from.
I think you get them by ordering the Deluxe version?
They are also in the item store for a few bucks each... They will be in the storage chest.
