-There's the "Diamond quests", which have multiple clues. Only one of the three is kinda impossible on your own, but the others should be fairly simple, provided you've found the hints.
There's the "Broken spell" quest, which starts in The Snowy Depths.
The "Watchtower quest" is probably among the simplest, But like the "Broken Spell quest", it also might be better to try on a "less good" run, since it isn't all that difficult. That quest starts at The watchtower in the desert, though you probably already guessed that much.
The "Crystal Key quests" are also fairly simple. You might need to find the clues for them, though, which very quickly gets tougher.
Out of the five "Moon quests", two don't have any clues, but the other three do.
I wouldn't describe "Fish quest" as much of a quest, but it's really simple if you have the right spells. You're probably not going to figure out any of it on your own, though.
It's specifically doing some of then "Sun quests" before doing all of the "Moon quests" that makes the latter more difficult,
