After some time you kind of get used to the pixels. I think the game is still worth buying and it's a lot of fun. I now have 80+ hours on it.

The games physics engine follows the falling sand style of computation.
Essentially each pixel is checking the pixels around it to either (A) react with their compatible compounds or (B) move into an unoccupied space.
This is done per pixel, so as one pixel moves on top of another it checks to the left and then the right to see if there are any unoccupied spaces to move into.
As such a higher resolution would only be possible on things like enemies or the player character and even then that would be limited as there are still physics properties attached to those entities as well.
While I can see why a higher resolution Noita would be ideal for some the current engine either simply doesn't allow there to be different sized physics pixels OR it can have different is sized physics pixels for higher resolutions but you effectively double the load each time you multiple the pixels.

I guess it's a miracle you took the plunge and bought Noita seeing as you were spoiled by the realism of AAA titles.
You have 80 hours in the game now, so that's great that you dig it. Well done for persisting and for embracing it!
This is just a classic issue with expectation vs. aesthetic.
