Are there any difficulty adjusting MODS?
I've played this game a multitude of times whether it be solo or with friends online with various settings adjusted but I feel like I've come to the same conclusion as I did with Civilization V.....the game is either way too hard, or way too easy with no in-between. I either steamroll over all the AI in a 1v7 or conversely, a Godlike AI rolls into my HQ in the first few turns with an unstoppable army and my mind is totally blown.

Could there possibly be a way to adjust how much income they get on higher difficulties? Am i missing something here?

You can adjust your own income/EXP gain/Troop generation to give less or more, than normal or make yourself start with 1 Marketplace.

However, I've just noticed that for some reason, Lavapotion removed the ability to adjust resources for individual players in singleplayer conquest games, but you can still do this for local hotseat games. Just tag out the other player(s) and add them as AI. Next to the "LEAVE" button of any human player should be a cogwheel icon, which pops up some resource sliders.

You used to also do this for individual AI opponents, but an update seemed to have hardcoded their logic with resource-gain, so above Worthy difficulty AI also gets more resources and below Worthy gets less, than the default. Maybe a future update adds back the option.

Makes sense for whenever they were like we want to make sure people who have issues with AI are actually on that difficulty. However, that (and unrelated to the post, but battlegrounds mode) are some things that should return eventually... like honestly it just needs to be a thing that exists in the game so that it can appeal to a wider player variety. Although can understand for them at one point when wanting to get the difficulty balance right they don't wanna deal with too much customization. Sure is important enough to players that I hope they reconsider tho...

You can never have too many options, as long as you label and disclaim the default intended one's clearly. Especially for difficulty, since it is entirely subjective.

It's also straight up fun sometimes, just toying around with extra options.

That's why i'm leaning towards, that the lack of resource sliders for human players in single-player being an oversight.
