I managed to do it now, just shot him in the leg so he fell to the ground, then a clean headshot and the brick was alive and well (mr. delgado not so much :D)

Was having the same problem, and other than shooting him in the leg and then the head, the brick always broke. Guessing it was a bug introduced sometime recently.
BUT! Shooting him in the leg, and then knocking him out (Q - Kick) got it for me!

Q does not "subdue" the target with the gun. If you Q from behind while holding a gun you eliminate them (kill shot with a double tap to the back) It does usually result in an intact brick, because 47 very slowly lowers the body to the ground, but it's a kill not a subdue.
If you Q from the front it's a punch, and the fall destroys the brick.
It basically comes down to the distance of the fall of the brick when dropped. If you shoot the target in the leg, then punch it will still break if the target was elevated by any objects in the world, if he is partially on the couch/table/stairs, etc. it still breaks the same as if it falls from him in a standing position. For the leg shot + punch to work he needs to be down near the ground, not bouncing off an object when you do the knock out.
You can also just shoot him in the head if he's still seated, the brick will land intact on the couch, but it will break if you waited too long and shot him while he was standing or moving.
But basically whatever method of kill/knockout you use if the brick falls more than a tiny height after it spawns, it will break.
I doubt there's an intended specific way, but shooting him in the head while he sits on the couch has the brick land on the couch
Any other method is just a question of how long the fall is from where the brick spawns as explained above
