Is the gold edition worth it?

Is it? Just for those two maps? (im mainly interested for the island).
What about ghost mode in the game? Is coop good? And what about sniper missions?

Yes. Gold edition is worth it imo especially at the sale price.
The Bank and Haven are both great maps and worth it on their own, but the special assignments and extra sniper maps are also pretty enjoyable.

Ghost mode is fun and pretty enjoyable though it's kind of dead so unless you friend some people to play with you'll be waiting in the queue for a while.
With just the Legacy Pack you should own the Himmelstein sniper map so you can give it a go yourself. Singleplayer sniper it fun enough and I'll still play it from time to time, the sniper multiplayer is nothing special and basically the same experience as the singleplayer as nothing changes except you have a second person with you.

Is the island and the bank replayable and eat least 5 hours of content?
Ive heard that the bank is too easy and island lacks content but I cant confirm. My favourite maps form Hitman 1 are for sure Hokkaido and Sapienza.

All missions are replayable multiple times, until you found every possible way to finish the mission. There is always a great variety in the possible opportunities to kill your targets. The bank in not easier than any other level. There is enough content in the two expansion maps for many hours of exploration and murdering.
