They really aren't that special, it's only like 8 or 10 of them and they either stand on the armor display spots or they see bodies and start dragging them away like normal guards
They spawn next to the armor stands and just stand there (unless they see you or a body)

negative 1,920,000 (I got bored after an hour of looking for more people to kill)
1,920,000 / 5,000 = 384 non target kills + 2 the targets dead + the constant knocked out and placed in a container
If there's more than that on the map I didn't find them on that run
It's an easter egg of sorts, the knights are not a normal part of the mission, you have to kill everyone before they even spawn-in
It's no worse an easter egg than turning every person in Miami into a Flamingo, or the mary poppins umbrella you can fly away on
Not all easter eggs reference other things, some are just gags.
What's the reference for the toy dinosaur exit? The fish fountain secret? The flying away as a bird secret? The golfer who turns into a ghost?
This game has dozens of easter eggs, i can't tell you what half of them reference
I think they were just messing with players who like to do kill-all challenges, this particular map throws a few more heavily armored guards at you that can't be knocked out
