The real "Himmapan Resort" (in Ranong Thailand) actually has only 9 guest rooms. It doesn't look like the Himmapan in Hitman (Bangkok Thailand) but they are around the same size for guest capacity.
There are a lot of luxury hotels in Thailand, the Hitman version seems to borrow elements from a wide variety of them without being based on any specific one. The name and size are borrowed from the Himmapan Resort, but the building design is closer to the 5 star hotels along the main river.
And as was pointed out above, the temple in the distance is based on a real one

Thailand is actually known for it's jungle resorts.
If I were to pick just two to compare the Hitman Himmapan with it would be the Mandarin Oriental but scaled down to the size of the Himmapan Resort

This is really well thought, as they have created something unique then totally credible. The game design is awesome.
The Himmapan hotel really does resemble the Mandarin Oriental hotel and it's a typical 'luxury hotel near Chao Phraya river' thing. We have quite a number of such hotels in Bangkok, Shangri-La, Sheraton, etc. ,but I think the Mandarin Oriental resembles the Himmapan hotel the most; a traditional Thai style mixed with some colonial - modern architecture.
Some parts of the restaurant and the Thai pavilion (Sala) by the river also somewhat resemble the restaurant area near the Chao Phraya River of the Shangri La hotel, but the accommodation area does not resemble the Himmapan hotel much like the Mandarin Oriental.

Furthermore, the costume of the hotel staffs, waiters, securities, even the bossy looking woman and their greeting gesture (Wai) are really on point and they do wear something similar to the game in the Mandarin Oriental hotel, Shangri La hotel and probably most of the other luxury Thai hotels.
There is a big garden in the Mandarin Oriental hotel, somewhat resemble the jungle-garden area of the Himmapan hotel in the game; Himmapan means a magical jungle in Hinduism mythology, which heavily influenced Thai culture and art after all.
The area where you find the tuk-tuk in the game is also pretty resembles the old town area of Bangkok, which named Talad Noi, which can also be easily accessed from the Mandarin Oriental hotel as well.
However, Wat Arun is not located at the exact opposite site of the Mandarin Oriental like the Himmapan hotel, but it is a nice touch. If you go to Bangkok and travel along the Chao Phraya River, by river cruise, biking, walking, tuk-tuk or whatever, seeing Wat Arun along the river is kinda a must.

I am studying in Sweden for a year, bought Hitman trilogy a few weeks ago during the sale and, man, this Himmapan, Bangkok, level really triggers my home sick.
The Himmipan Hotel is an almost 1:1 recreation of the main section of the St. Pancras Hotel, London! Below is a photo of the St. Pancras lobby, so you can see. They've moved the furniture around a bit, but the bar and wall-window-things are exact!

The real St. Pancras is huge, so the level is scaled down, but it's absolutely the same place, including the cafeteria/restaurant off to one side and offices to the other. Obviously I have no idea if the staff areas are the same.
Other places in the St. Pancras have been moved into the 'main' area so they can be included, for example the Pullman Lounge (below) became the sushi bar.
