So, for a jumping on point to the Hitman series, I sugest Hitman 2, as you can currently get all the content for Hitman 1 (2016) as content here by either purchasing Hitman GOTY or the GOTY Legacy DLC pack.
These most recent two Hitman titles are the most user friendly, and while they are the furthest along in the overall timeline, the story of the Hitman series is less important than the gameplay.
As for ones to avoid, I think the unanimous decision is that all Hitman titles are good, just some are not for everyone. The original game, Hitman Codename 47, suffers from low draw distance, a lack of modern mechanics, and crippling controls.
Hitman 2: Silent Assassin and Hitman Contracts are much better, but suffer from poor quality graphics, confusing stealth mechanics, and bugs on modern Windows.
Hitman: Blood Money is where the gameplay started smoothing out and the mechanics became extremely acessable. If you don't mind the slightly dated graphics, I highly recomend this one, still holds up pretty well.
Hitman: Absolution is an interesting case. This one is more focused on the action and setpeaces rather than open exploration and player freedom. If you're a fan of 3rd person shooters with Stealth options, this one's pretty good.
Oh yeah, and the spinoffs are ok. You can get Hitman GO and Hitman Sniper Challange on iOS and Android. Sniper Challange is a nothing special sniping game with 1 map and asks 50 bucks for a new rilfe. GO is a really good stylish puzzle board game that you buy once and just play. Great fun.
The older ones all have awful visuals and worse game mechanics.
Blood Money is also good to begin with. It is quite dated, but dirt cheap, was great back in its day and basically a lite version of the modern games.
Silent Assassin and Contracts are too dated to start with.
Codename 47 is complete crap, frankly.
If you don't actually like stealth games and want linear levels and lots of cutscenes, you can get Hitman Absolution. That was a weird experimental phase.
Follow these steps for best experience:
1) No need to start with C47. Start with Hitman 2: Silent Assassin.
It might be hard and painful in the beginning but don't give up and do it til the end.
2) Then start Hitman: Contracts.
At this point you should already feel an improvement and difference. Finish it before continuing.
3) Then you're getting into serious stuff: time to play Hitman: Blood Money
At this point you should feel how the game evolved and the differences of the gameplay. You will also know more about 47 and the story in general.
4) When you're done with Blood Money it is time to go to the next level: HITMAN 2016.
(no need to play Absolution it's the worst of the series, not even a real Hitman game).
At this point you've reached the modern era of HITMAN. It will be a completely different gaming experience.
5) Then when you'll be done with all these games, come back here and post your impressions before trying the latest game: HITMAN™ 2

I don't know if what you said was sarcasm but Hitman: GO was a decent fun spin-off.
It's a perfectly fine place to start the series, the story doesn't rely on anything from the previous games beyond 47 being an emotionless clone.
Absolution is a more linear action focused game compared to the rest of the series, and the older games haven't aged all that well and will likely be more tedious than anything else to play today.
