Solution : Use DirectX 12 or wait for a patched version of DirectX 11 inside Hitman's in-house Glacier 2 Engine. IOI continuing to work on a solution to this with Nvidia since January.
According to my observations after 5 months, with DX11 and Nvidia Turing architecture, the GPU randomly hits the timeout threshold defined in TDR Windows registry keys, this causes the driver to stop and therefore crash the game. The default threshold value is 2 seconds.
With a low level API like DX12 or Vulkan (with DXVK), the GPU never reach this threshold, result : 0x80000003 exception never happens and Hitman 2 does not crash anymore in these circumstances.
0xc0000005 issue can happens from time to time, but I've had it once since setting up DX12, and I did not have a normal usage of the game, I was doing lots of tests reloading my saves several dozens of times per minute.
In conclusion, the game no longer crash for me since I'm using DX12.
