Though bear in mind that the end date is soft... the game won't pop up a GAME OVER dialog and kick you to the main menu... it's just that there won't be any more scripted events, you'll eventually run out of inventions, that sort of thing.

Most likely, this is how it works in most Paradox games. You just eventually run out of new things to research and I think achievements are locked out after the end date. But you can usually play indefinitely.
Even if not, it's literally trivial to mod the end date to the 2000s as it'll be in the same engine as all their other games and it's a basic text file to do so. (Probably Defines, can't remember as I haven't modded in a year or two now)
