Governors are assigned to regions, not individual provinces. Your main leader is automatically governor of your capital region and cannot be changed.
For comparison, in my current British game, I didn't need a new governor until I took land in Scotland. My main leader was perfectly happy to control the whole of England and Wales herself. In Italy you'll probably need a new governor when you expand south into Magna Graecia. A status icon will appear when a new governor is needed. Until then, don't worry about governors.
Also not sure if this is a bug but I noticed one of my characters has holdings in uncolonised land, is that normal?
