there is Avorion but Its less like eve and more like the x-series + minecraft + diablo. this can be multiplayer, and its more of a tailored single player experience with missions that lead to an end. boss fights etc.
a single player game like eve, there just aren't any because eve ofc isn't single player. how would you duplicate a multiplayer game like Eve in single player.
the closest popular game currently, that is closest to Eve is probably Escape from Tarkov. only because its been directly influenced by Eves pvp. it has a very similar game play loop. and ofc full loss pvp. which is something you can't really recreate in a game that lets you load saves. so any game that lets you load saves isn't like Eve, because you can't have redo's in Eve.
even games like the x-series have to cheat to appear like the complexity of a game like eve is taking place in the back ground but it isn't. not even close. if there was a game that could run on a typical pc and have 1000s, maybe 10s of thousands of AI roaming around the universe, trading, fighting exploring etc. it would be something. alas that game does not exist. the problem is that the idea is counter-intuitive, Eve is what it is because of the other players, it would be like asking what is a game like war thunder or world of tanks, but single player. i'm sure there are games that are similar but not having the other players defeats the purpose of what you're asking for. in other words the other players are what make the game what is it. so without them, it wouldn't be the same, by default.
its the trouble with single player games in general is that the game revolves around you, you are the centre of anything that happens. where as Eve isn't like this, everyone might have their moment from time to time but the game doesn't revolve around individuals. or even if you want to think that it does, there are a lot more individuals than there are in a single player game so you have many many more paths and perspectives, a whole lot of complexity happening simultaneously. there aren't really any single player games that can replicate this. no where near to the same scale.
it has always been an interesting idea, if you had a game like skyrim but there were multiple main characters roaming around the map, doing missions, I bet programming a truly dynamic AI that can play a game as varied as a human player would be extremely difficult to achieve. but its something you don't see, AI hasn't reached the point where it can be let loose on a game and act like another player, having a completely different journey. compete with or join you etc. AI in games is kinda one dimensional, it isn't programmed to be complex enough to be the driving force of the game, the player is always that. but this is what makes games like Eve interesting is that there are many driving forces and they aren't AIs.
best ive been able to do was like star sector with some mods which is very fun though
distant worlds < thats the type of game that will just play itself almost, but you can turn off the automation and control as much of the game as you want manually.

unfortunately I dunno how well distant worlds 2 is going its in early access afaik but the last time I checked ppl weren't that happy with it compared to the original, the original game is kinda old now and suffers from being 32bit. on big games you're gunna run into out of memory issues. even if you make the executable large address aware.

you might like this, it's old and on rails and not open world but its a fun game with combat simillar to eve
