Lots of people like to brag about doing lv 4 missions in cruisers, but they don't talk about all their relevant skills being at 5 and how LONG it takes. heh
If you are doing missions in hi-sec and don't need to worry about being ganked, you can use an overpowered drone attack based ship and therefore use the same ship for all mission levels*, since drone ships are versatile. e.g. if you are flying a Myrmidon (love my Myrmidon), you can have in the drone bay at the same time: Hobgoblins II, Hammerhead II and Ogre II / Garde II for frigs / destroyers, cruisers, and bs's respectively. Ultimately, you will basically use Hobs for level 1 missions, Hammers and Hobs for level 2 missions, and all of them for level 3 missions.
Try searching on Eve Clynic a decent fit for the Myrmidon, you should find it easily.
IF you are doing missions in low-sec, don't use overpowered ships for low level missions. You will have the risk of losing it to random gankers and that risk, doesn't matter how much you are capable of minimizing it, isn't worth for level 1-2 missions. Then you should stick to Destroyers for L1, Cruisers for L2 and BC for L3. It is possible to run L2 with destroyers and L3 with cruisers, but it may not be the best money/(time*risk) benefit. Unless your Cruiser is a T3, of course.
*: Some missions may have ship restriction.
