They actually mine more over all than they used to. Part of the rebalance was to increase the amount that the strip miners themselves pull in. Now, instead of there being mining amount bonuses from the ship skils and role bonuses they are duration bonuses.
I just dusted off my oldest version of EFT:
Pre-rebalance a max skilled Covetor fit to mine the most it could (including harvester drones and orca boosts for giggles) pulled in 2,760m3 per minute.
Post-rebalance an equivalently fit covetor (also with harvester and orca) pulls in 3,138m3 per minute.
That said though, you'd be better off with a procurer or retriever if you mine solo. The covetor only has a 7k ore hold, so it'll fill up every few minutes and has to leave the belt unless you have an alt that can come and pick up a can or sit there in an orca. In contrast the Procurer and Retriever have ore holds of 12k and 26k (respectively).
The procurer can fit a near battleship level buffer tank on it and the retriever can stay in a belt for days before having to off load. The same applies to the t2 variants as well.
For example, the Covetor/Hulk are essentially fleet miners, with their small cargo, high yield, and lack of anything resembling a tank they need to be supported in the field.
The old system meant the some of them, like the procurer/skiff, never got much use.
