cant. an easy way thats like traditional mining(not jetcan mining) is to just throw a mining laser on a industrial an maybe a few hold expanders. note this`ll make em a whole lot slower and your prolly gonna have issues with npc ships in belts if they havent already been cleared, but they can hold more. my bestower can do 9k if i throw some on it but i believe it`ll only go bout 90 m/s which is slow as hell.
anyway you can do agents that`ll get you a industrial for free. then just outfit it for mining. it`ll cost ya tho so i recommend you dont do it tilll you got more then enough to replace it if you lose it.
Just keep in mind that anybody can attack and destroy that (MTU) and CONCORD does not destroy the aggressor he only gains a suspect timer. MTU size is 100m3 and venture cargo is 50m3...
MTUs are not cheap either... 8m if im not mistaken.
A cheaper but dangerous way can be jettison the ore. When you jettison anyting a cargo container is created whit 27.5k m3 of capacity. Anybody can see the inside of the container and steal the content and the thief only gains a suspect timer.
