It sounds to me like You havent been down to the fabricator caverns yet have you? The giant red crystal/block biome further down past the crystal caves is where you build the body. I personally found that place first before any body parts, and I feel as though it triggered a 'quest' to find the parts needed.
I could be wrong though, maybe you found a glitch somehow.
I've been doing the storyline sooo out of order, I personally don't know where to start and which's the correct order so I did this
I've found that lady in the prawn suit, she said I have to turn off a big satellite which I did, later I went to her greenhouse and then I didn't know what to do, so I started to explore nearby the lifepod and I've found the "Sanctuary", before that I've found some of the stations, like the Phi, Omega and also the frozen creature, I just found the alien Alan plot today :v, so I'm really really lost.
Should I start a new game ?

Has Alan been showing you where to find artifacts since you found him? He will give you the exact position of some of the artifacts. He talks alot once you find him, so In my latest playthrough i did everything else before getting him.
My advice (what i would do) Is play until he stops giving you locations, then go find the fabricator cavern and have the conversation with him there, then after that go up back to the organ and see if you can scan it yet. At that point if you cant scan it and you dont have the pda entry (alien technologies) tben you are definitely bugged and probably wont be able to finish thhe game with your current save.
As for right now, I don't think restarting is necessary.

Then you'll be able to scan it probably. Check also your blueprint tab in the PDA to be sure you don't have it.
There is no real order in the way you got the story. If you can go somewhere, that means you're supposed to go there. Usually people find the sanctuary first, but it doesn't really matter. If the story wanted you to do it in a specific order, you would be stopped.
It's a design decision to let the player do other parts of the story if they want. Not a story logic issue that needs to be fixed.
I forgot until @Ignis wrote above, that scanning this alien artifact should result in a blueprint which is the objective you are looking for to progress the game. The fact that you have the databank entry is near certain evidence that you have the blueprint, but you do need to confirm that. The blueprint should be found at the very bottom of the blueprints page in your Databank and should be labeled "Architect Organs"
If it's there, you're absolutely good to go. You don't have to go tho the fabricator cavern at this time. You need two more blueprints (Architect Skeleton and Architect Tissues) if you don't already have them. AL-AN should give you markers to these artifacts over time. Once you have them, you can craft his body at the fabricator base which is pretty much the end of the story that is currently accessible.
As further background, I'm pretty sure I experienced your issue on my first play through of the current Seaworthy beta. I didn't initially realize I had to scan artifacts after being led to the various bases containing them. I had already been to the Crystal Caverns base by then, but to my knowledge, had not scanned it. Once I discovered I needed the scan, I went back but was unable to collect it. However, I subsequently discovered I had the blueprint. It seemed that there was a bug, that under unknown circumstances, caused the blueprint to pop without a scan.
