Hydrangea and red cosmos

Hydrangea are found in the forest where the tall grass is during Spring. You might not be leveled up enough to see them yet if you're just starting out. Red Cosmos are probably Fall, as Spring and Summer are the same blooms and winter is mostly veggies and blue flowers, aside from one.

Yeah I found Red Cosmos on Fall 01 of year 1 for the first time. I thought I'd found them earlier but those were daisies. Curse you, asters!

The first one showed up on my farm.

Sunflowers are a fall only flower, but you can buy the seeds from the shopkeeper that will move in next to Sammy.

Just keep in mind the seed selection rotates each day so if you don't see the seeds you want one day check back the next. :)

I never unlocked Sunflowers my first Fall, I'm hoping to see them when I hit my second Fall, but I was just buying the seeds until then x3

So far, each time you unlock a building upgrade through Frank's table an additional plant spawn is also unlocked. (It seems to apply across seasons too. I had added a new flower in winter, which disappeared when winter ended, but then when I got to spring I had a new spawn that had not been there the previous spring. So, I think it occupies the same slot as the new winter spawn had.)

I have noticed that for certain quests its not clear what colour hydrangea is required, as we have white, red and blue...

Most of the time it's blue.

Red cosmos appears in the wild in the fall or in Penny's shop
Penny's shop unlocks when you've completed Sammy's wagon quests in the fall

There's an item just called "Hydrangea" which is light blue. So far I've been tripped up by this once and it was because I was growing "White Hydrangea" when it was "Hydrangea" (the blue one) that was needed. Not sure if there is a special "Blue Hydrangea" or not but I'd guess not since the game is otherwise pretty good about asking for the specific item needed.

All of this is very ironic considering that IRL, blue, white, and pink hydrangeas are all the exact same plant, just put into different types of soil. But pH mechanics are probably a bit much to ask of Garden Paws eh?
