4 triplets + 1 pair. A triplet can be 3 identical tiles or tiles of the same type in a ascending order (ex: 123, 234, 678)
Ace is always the first tile and 9 is always the last, so you can't make 912 as a triplet. Thus, triplets starting with 1 or ending with 9 are more difficult, because there is only one option for them (123 and 789 respectively).
Honor tiles, aka dragons and wind tiles are not that valuable. In order to get bonus points for dragons, you have to have 3 identical tiles. And wind tiles you must have 3 identical tiles and being either your seat wind or the round wind. It's not worth the effort.
If you think you are close to wind, press X button (xbox controller). If you are in Riichi status (one tile away to the victory) it will prompt you to do so: select one tile to discard (please check the upper right corner to see if the wished tile is still in the game). If you proceed, your hand is locked and the game plays for you until the wining tile appears in your deck or is discarded by an other player. Please note that in order to Riichi to work, you mustn't steal any discard tile before.
And that being said, steal is not recommended. Only steal if you are a pro and you need that steal.
All simples is probably the most simple hand you can make, which is 4 triplets and one pair that do not contain a 1 or 9. If your hand contains those numbers, you probably can't win with all simples, unless you're going for more complicated hands like full straights.
If you have a triplet of a dragon or a wind tile of the round/your seat, you can win with any combination of triplets and pairs.
But they are still not that valuable, so get rid of them at the beginning of the round unless you have a pair of them or something.
