The "Kiwami" finishers -- one per style, three that you can and should pick up in the Soul tree, and one that only comes late in the Dragon tree -- are heat moves that you can use for this purpose, but only if you match your style to the boss's (e.g. use Beast mode and Essence of Extreme Beast on a boss glowing yellow, Rush and Essence of Extreme Rush for a boss growing purple etc) and if you're in heat mode. If you're not in heat mode hopefully you have a Tauriner or Staminan to drink, or you're just a few free hits from getting there.
As noted above any heat move will do, so you could always pull out a knife or grab a nearby sofa, drink Tauriner if you need the heat, and then pull one of the Essence of Stabbing movies. Doesn't have to be one of those Essence of Extreme <X> finishers.
It's a nice touch so that you'll need tauriners in some fights if you don't stand the bosses recovering some of their health. At least to me it makes the heat replenishing items much more valuable than they were in Y0.
Press triangle. Or Y button.
Look at the colour of the boss flashing. If it's blue, you switch to Brawler style and press triangle. If it's yellow, you switch to Beast mode and press triangle. If it's purple, switch to Rush and press triangle.
You will perform a finisher / Desperation Move (DM).
They seem to have changed their mind again since they didn't bring back this mechanic in Kiwami 2, AFAICT.
