They could have, but probably didn't. Remember that we all have plasma in our blood, just not the purple explosive kind.
This. Plasma doesn't necessarily mean ionised gas. Thus, in Bioshock, "plasmid", and in biology in general, "plasm" - apparently from the Greek "to shape", and from the latin "mould" or "shape".
So essentially, it's a fluid that contains something, in the case of blood plasma, or in this case, the plasma carrying the acid.

Turns out there's no specific tyranid biomorph that could account for the bio-blast genestealers. Some tyranid strains do use bioplasma bioporphs, but its use seems to be limited to the larger strains, like Hive Tyrants and Carnifexes. Genestealers don't use that particular biomorph. Instead, what we're looking at here seems to combine traits of multiple biomorphs. Based on what I could find on lexicanum, what we see from the bio-blast genestealers seems to be a combination of Xenogenic Acid, Toxic Miasma, and Toxin Sacks. Damage from those biomorphs is usually due to acid or really corrosive venom. So I'd say it's acid, not high-energy plasma.
