Could there be some kind of bug when it comes to spawning stuff?
It could be the area you're living in. I have a camp near the anaconda island and I can sometimes get 6 nuts in one day just going from palm tree to palm tree.

Edit: Although that's not representative of the typical catch. Sometimes game-days go by without seeing any in that area. Not sure if it matters, but that screenshot was taken during the dry season too.
To answer your question, realistically, yes, they're relatively rare. I don't think it is a bug.
