I'd say Resurrection fits your description better. But I'm not at your skill level, as in I cannot take out any bosses without damage. So, it could be Resurrection is too easy for you, because I don't think it's all that much more difficult than vanilla, though some bosses were very hard for me.
Long May the Shadows Reflect is definitely harder, but a lot of the difficulty also comes from sort of ♥♥♥♥♥♥♥♥ enemies... Like facing multiple minibosses at once, or enemies giving you "curse" buildup if you don't deflect, with the curse having different effects like gradual health loss. Enemies also generally recover posture very quickly, so you need to be on the case.
But you can play both at the same time, so why not try both.
Resurrection is an excellent choice, although its still in development so its not yet a complete overhaul, but what does overhaul is top quality.
For the Sake of Ashina is another overhaul that, like resurrection, is incomplete but what it does it does very well. I liked it slightly less than Resurrection, but both are top quality.
I would NOT recommend LMTSR unless you want something brutally hard. When I tried it I found I was just spamming the buffed prosthetics because of the massive amount of enemies and status-effecting projectiles the author thought it was a good idea to throw at you at once. Its probably the most complete out of all of these I mention but I'd still steer clear.
If you want something difficult check out JiDao. I'm not exactly sure how much it overhauls but its Inner Isshin fight is the best of the 8+ Isshin overhauls I've fought. Like LMTSR its incredibly difficult, but in my opinion significantly more fun; less AOE status-affecting spam, more long, difficult combos and new moves to get yourself used to so the difficulty is less frustrating and more about learning.
TLDR: I'd recommend Resurrection for its few top-quality tailored boss fights, or Ashina Incarnation if you want a balanced overhaul that isn't too drastic.
