Sekiro fights are very much dependent on using your skills, tools, and prosthetic arm gear. In all but a few cases, just trying to whack your way to victory won't work.
Use the training NPC to practice your basic combat moves and you will very quickly send that Boss to his just reward.

I would not recommend you to use guides on a first playthrough.
Learn to deflect. Talk to the Sculptor at the temple and he will tell you to meet a man outside, he'll help you learn the very basics that help you get started. And be sure to always use stealth to turn each situation in your favour
It takes some time to learn this game. It took me like 3 hours for the real first boss but after that i got used to this game.
I didn't see any bait. I saw several guys guarding him. I can't kill them all at once. I will go back and try to find the bait.
Low chance that you will aggro a spear guy when fighting the ogre but you can just lure him down.
IF you explore well and find the bell charm from the"old lady" you can go into Hirata Estate and get the Axe and Flame vent.
Flame vent is very useful againts red-eyed enemies like the Ogre.
Ogre is likely the first skill-check sub-boss in the game.
