Who can you actually do anti air deathblow against?
I was trying to do anti-air deathblow on those monks that have double headed spears at the main hall of senpou temple, but it never worked... they jump and fly all around the place and i could never do an anti-air deathblow.

How do you do it? You just jump into them when they are jumping and press RB or you need to have them at low health? When the tooltip appeared i was in the middle of one of the intensiest fights of my life and couldn't read it.

To execute an anti-air deathblow, you have to do it while your enemy is in the air. So, basically, they jump in the air and while they are still in the air, you jump up (you have to be close enough to the enemy in the air). If you are close enough, you should see a red dot appearing on your enemy. Press the attack button as soon as you see the red dot.
For those guys that you have mentioned, it is difficult, not impossible because the time they spend in the air is so short. Unlike the armoured guy down at the area where the Bottomless Hole idol is, this guy hangs in the air while shooting out evil spirit at you. So, it will be easier or rather higher chance to be successful in executing an anti-air deathblow against him. But with these guys that jump around swirling their double headed spears, you really have to know their moves. Oh, and you have to be at close quarter facing them. By the way, just letting you know, that throwing ceramic at them while they are in the air can really stunned them. It seems that ceramic is more effective than shurikens.
Hope this help. Good luck and have fun :)

This guy of the evil spirit was my biggest nightmare on my first run, had no idea you could just anti air deathblow them like that :o

Will check if i can at least once anti air those annoying monks at senpou temple, they always kick my arse, thx for the tips.

What make the fight against these guys with double headed blades much more difficult is the fact that there are three of them. There are two of them standing there and the 3rd one is on a patrol route. It is best to take out the one on patrol first. Do it by getting out of the temple using the side door. The best time is, say you just fast travel to the Main Hall Idol, straight away run to the side door and you should see the back of the monk walking away. Just carry on running and do a stealth kill deathblow on him. It may be best stop running when you are getting close as this will make less noise.
Now go and fight the two. One good tactics is to jump around and grapple (so you may have to run around first to take note of where the grappling points are). The best time to do an anti-air deathblow on them is when they are on hot pursuit chasing you. When they jump across the middle gap, turn around and jump towards them, voila. May take some practice.
The most or rather more subdued way to kill them (I always did it this way nowadays when I want to farm XP), from the Idol, (if you want to farm drops, pop a green balloon here or / and any other balloon you fancy, yellow for gold, white for spirit emblems or pink for live essence), just run out the main entrance and turn left immediately. The aim is to kill the monk at the corner with stealth kill deathblow. As soon as you run out, this will alert the other two guys with double headed blades. Do worry. If you are sprinting towards that monk's back, you have plenty of time to execute a deathblow.
Carry on running and deal with the 2nd monk (who can throw bombs). Again, do a deathblow. Now, carry on and run up to the 3rd monk and start fighting. Most of the time, you will have to fight him normally. But even at low level, you can take him out with 4 hits.
By this time, one of the double blade guy will be on your back, literally. But the game is designed in such a way that if you carry one running to the left or right (I always run to the left) and then crouch down. The double blade guy will stop. And after waiting for a minute or so, he will start to back up. Stay where you are. Watch him backing up. Usually, he will start to walk back but still be alerted (by the fact that the yellow triangle is still on top of his head). Follow him but don't get too close. Basically, just wait till the triangle to disappear and then crouch walking to his back and do a stealth deathblow on him.
The other should or most of the time will be back to his initial standing position with your back facing your way. So, just do a stealth deathblow on him as well.
This is the safest way to deal with them if you are at the early stage, i.e. have not got the mortal blade yet. Not that you need the mortal blade to fight them. It is just that at such an early stage, even your shurikens will be so weak and you have only a couple or 3 healing potions.
Anyway, hope this help. Good luck and have fun :)

Anti-Air Deathblows tend to be a bit janky and easy to miss with against most opponents, but it is generally very worth it to pull off. Here's a shortlist off the top of my head for enemies it works on:

1. The five Beyblade Monks in Senpou Temple
2. Shichimen Warriors
3. Okami Leader Shizu, and other foes that do be ballin'
4. Okami Swordswomen
5. Roosters
6. Monkeys

It should be noted that Anti-Air Deathblow only works against floating/flying moves. Most enemies that it works on also have moves where they're just jumping around quickly, and A.A.D. won't work on those.

I swear i can't anti air deathblow shichiman warrior, i did exactly as shown in the video multiple times, there was never a red mark, i have the ability unlocked, unless you need to reach a specific point in the story or something, or my game is broken.

Will test on other monsters to see if i can pull it off

You can try verifying the integrity of local files first. Are you sure you were close enough when you jumped up while the warrior was in the air?

Managed to do on chicken and beyblade monks, but shichimen still no success, if it was easy would make a boss fight too trivial, but i will keep trying altho it might be hard af

The only way to make it work is to use confetti. It's not possible to do it without confetti.
Still very hard to do. I couldn't. Fighting Cowboy did it in his guide and he was also shocked how much easier the fight gets if you manage to pull it off.

Ah yes, confetti. Yes, you need them. If you don't use one, when you parry those "evil" balls, very quickly, your terror bar will be full up and you will die. He can shoot a gigantic terror ball at you. It has some homing effect. You can evade it but if it hit you, that is it. You are dead.
If you got yourself the purple gourd, use it. This will reduce terror damage done to you if you get hit by the smaller terror balls. Incidentally, if you get hit by the warrior's staff, you will suffer terror damage as well as health damage.
I always use a red sugar, then a confetti, then use the purple gourd. Then I will charge in and attack.

i always killed him without confetti, just evading all dem ballz and hitting him with flat blade damage, i think i killed two of them the hard way on my first playthrough, almost got insane but did it, never thought about confetti, always thought it was exclusive to the headless apparition, the one with the scythe, feels bad now, but feels good knowing i did them the hard way and succeeded

Wow, well done! I always fought these warriors with confetti. Well done for defeating them without the confetti.
Incidentally, the confetti increases the damage dealt by Sekiro against ALL enemies. And fighting against ghostly figures, like the ghostly corrupted monk, Orin, and the like, confetti really really help. Other players will say that you don't need confetti at all in this game. But for me, an average gamer, its boost in damage will really help.
Not sure if you will be challenging yourself when you get all the achievements and endings. That is to play the game without the Kuro's Charm. It demands for high success rate of executing perfect parry/deflect. You may find yourself farming XP and money a lot as you will run out of pellets and spirit emblems very quickly. Have fun. :)

But that's exactly what i'm doing, charmless run.
I never used confetti except for the Headless guys with the scythes. Never realized they increased damage against other enemies, good to know.

Later on in the game, well, after you defeat the True Corrupted Monk, you will get an item which allows you to buy confetti from ALL vendors. But before that, either you find them lying around (not a lot), or from loots killing enemies. The best place to farm confetti is starting from Ashina Antechamber. But you will need to be without Kuro's Charm, have the Demon Bell on you, plus a green balloon, oh, and the two arts in Senpou Art skill tree. Then you can have a decent drop of confetti. Otherwise, if I remember correctly, it can be as high as 1 drop per 30 to 35 kills. Other can correct me if I am wrong.
