The best approach to every human boss fight in this game is:
1- Learn the combos & attacks of the boss, and their timings.
Learning which of the boss combos can be interrupted by your regular attacks will help a little. But deflecting & countering the attacks/combos and then attacking after the end of the combo does the job better than running away from them.
2- Do the "dance".
In Sekiro, you and the boss take turns in attacking and deflecting. In general you can do 1-3 hits then the boss deflect your attack (you hear a nice clang and see a lot of sparks) then it's his turn to attack and yours to deflect and counter.
3- Always remain close to the boss and keep his posture under pressure by either attacking or deflecting, never remain idle
In Sekiro, the bosses are the ones that really want Sekiro to remain away from them and recover posture. Sekiro, on the other hand, can keep deflecting (not blocking) & when his posture bar gets broken he is rarely punished (with a properly timed roll from the stun).
4- Use the Shurikens to interrupt Owl from recovering posture in phase 2 & the ability [Nightjar Slash] will help Sekiro reach the boss fast once Owl jumps away from you.
TLDR;
Learn the boss attacks and combos. Deflect & counter. Keep the boss under constant pressure.

1 hit him with shuriken when he trying do this.
2 run to him and hit him with sword
3 get hit by he's anti healing bomb it will make him more aggressive and he will go full rampage mode .
2. Hold block. Long, passive.
You can try to hold the block button to recover your posture but this make the boss gain his posture back. The best way to manage posture is to learn how to deflect by learning the boss attack timings (since your posture will never break even when full with proper deflects).
As for the firecracker attack. When the Owl uses a shoulder attack followed by a sword slash (the firecracker combo animation) then all you have to do is deflect both initial attacks then hold the attack button to do a thrust attack. Sekiro will charge away from the crackers and attack the distracted Owl.
dodging really doesnt work here, so just deflect and punish openings, thats it, you can deflect pretty much every one of his attacks with enough practice.
Yes, "Deflect" is when done at the exact time. "Block" is when you hold it down or pressed slightly at the wrong time (pressed too early or constant tapping)
I checked again some video. But the owl i am facing has nothing to do with the pathetic owl i see in the videos lol. Mine kills me in 2 hit so if i miss one hit (only one) he follow by a second one unstoppable and or kill me or get me to 10% life.
The one i am fighting use firecrackers like hell and this stuff insta kill.
The one i am fighting even when at 20% life, if i deflect like 6-7 times, his posture don't go up at all (or nealry). Even double ichimonji doesn't move his posture by more then 5% (and he is at 30% life).
Maybe the deflect must at 100% of the time be on time to make his posture go high.
Last thing, even if i try to deflect after 3, 4 successfull deflect (or block) my posture is at max and the next deflect make me stun for a few seconds.
During that time he usually insta kill me using an attack where he put me on the ground, block me with his body and put his sword in my heart.
I will make some video tomorrow. it is very irritating as i love that kind of game. i am not very good at it, i know, i am an old guy (nearly 50 years ) but still love the challenge and so far finished all dark soul and didn't find any boss very hard in sekiro except that one.

In general, Owl deals a lot of HP & posture damage when compared to other bosses in Sekiro. You can only slightly minimize Owl damage by acquiring more prayer beads. You can have up to 8 prayer necklaces just before Owl Fight. Check a youtube video of where to find the missing beads/mini-bosses. At the end, you have to live with the fact that your posture bar will be full most of the time when fighting Owl as a new player.
A lot of new players make a mistake by ringing the Demon Bell and make the game harder on themselves without realizing it. If there's a smokey red icon below Sekiro HP bar It means you are playing on a harder mode (it can be removed from the consumables menu by using it)
I'm 38 years old. I can beat Sekiro on the hardest difficulty (NG+7/Demon Bell/No Kuro's Charm). I think you're capable of beating the game on the default difficulty. It just takes a lot of practice, patience, and the willing to learn from mistakes.
